摘 要:玫瑰花渣是从玫瑰花中提取玫瑰精油时产生的废弃物,但其具有很高的再利用价值。在工厂的实际生产中,这些玫瑰花渣大多数被作为废弃物扔掉,这不仅影响了环保,也是一种资源浪费。本文利用花渣中的膳食纤维、多糖和类黄酮成分开发了两种健康食品,并对其卫生学、理化、食用安全性指标进行了检测与分析。结果表明玫瑰膳食纤维饼干、玫瑰多糖压片糖的安全性均符合国家相关标准规定,玫瑰膳食纤维饼干富含蛋白、脂肪、膳食纤维等多种营养素;玫瑰多糖压片糖对试验动物的凝血有一定的调节作用。玫瑰花渣的综合利用改变了现有以玫瑰花原料及初级加工品为主的生产模式,实现资源综合利用、加工废渣再利用、高附加值玫瑰产业链深度研发的目标,为今后企业实际生产应用及推广提供了理论和实践基础。Rose dregs is the waste produced when extracting rose essential oil from rose,but it has high reuse value,such as extracting and utilizing flavonoids, pigments, polysaccharides and dietary fiber. But in the actual production of the factory, most of these rose dregs are thrown away as waste. This not only affects environmental protection, but also a waste of resources. In this paper, two kinds of healthy food were developed by using dietary fiber, polysaccharide and flavonoids in flower dregs, and the hygiene, physicochemical and food safety were tested and analyzed. The results showed that the safety of rose dietary fiber biscuit and rose polysaccharide tablet sugar were in line with the relevant national standards. The rose dietary fiber biscuit was rich in protein, fat, dietary fiber and other nutrients;Rose polysaccharide tablet sugar can regulate blood coagulation of experimental animals. The comprehensive utilization of rose dregs has changed the existing production mode focusing on rose raw materials and primary processed products, realized the goal of comprehensive utilization of resources, reuse of processing waste dregs, and in-depth research and development of high value-added rose industry chain, and provided a theoretical and practical basis for the actual production, application and promotion of enterprises in the future.
