摘 要:《肉制品加工技术》是食品智能加工技术专业学生的核心课程,主要讲授肉制品加工基础知识和各类肉制品的加工技术。将思政教育元素融入该课程教学改革各环节有利于提高其育人效果、充分发挥育人功能。以“台湾烤香肠加工”教学设计为例,结合教育相关的思想理论和专业特色、人才培养目标、课程特点,探讨了课程实施思政教育的融入点、融入方式等,探究该课程的教学改革实践路径。多年实践经验表明,通过思政教学改革,学生的学习兴趣和职业素养明显提高,达到了课程的思政教育目标。Meat processing technology is a core course for students who major in food intelligent processing technology.Students mainly learn the basic knowledge of meat processing and processing technology of all kinds of meat products in the course.The integration of ideological and political education elements into the curriculum teaching reform is beneficial to improve and give full play to its educational function.In this paper,the integration points and integration methods of meat processing technology were discussed,which took“Taiwan sausage processing”as an example.The article also explored the practical ways of teaching reform of the course,which combined the ideological theory,professional characteristics,the training goals and curriculum characteristics.It has been showed that the learning interest and professional quality of students were improved significantly through the ideological and political teaching reform.After years of practical experience,the ideological and political education goal of the course has been achieved.
