摘  要:红枣色素主要是从红枣皮中提取的天然色素,其色泽比较鲜艳,安全无毒,是理想的天然色素来源。在社会经济水平不断提高的背景下,人们的健康意识越来越强,由于合成色素具有一定的致癌性,应充分利用天然色素资源。在此次研究中笔者主要分析红枣色素的提取工艺,并从不同角度出发深入探究红枣色素的理化性质和功能特性,明确开展红枣色素提取工作的意义,为更好地开发红枣色素提供可靠支撑。Jujube pigment is mainly a natural pigment extracted from jujube peel,which is bright in color,safe and non-toxic,and is an ideal natural pigment resource.In the context of the continuous improvement of social and economic level,people’s health awareness is getting stronger and stronger.Because synthetic pigments have certain carcinogenicity,natural pigment resources need to be fully utilized.In this study,the extraction process of jujube pigment was mainly analyzed,and the physicochemical properties and functional properties of jujube pigment were deeply explored from different perspectives.And this paper clearly carried out the significance of red jujube pigment extraction,providing reliable support for better development of jujube pigment.
