摘 要:郑板桥饮食观视角下的运河美食旅游开发有利于促进大运河文化带建设,做大做强扬州“世界美食之都”金字招牌。郑板桥饮食观主要体现为:食材广泛,就地便取,强调水产和蔬果的时鲜;口味清淡平和,重视本味;菜品追求高雅、清新,体现放达闲逸的文人性;宴席类型多样,简单灵活,富有情趣。郑板桥饮食观与淮扬菜一脉相承。当前可以运用“美食+教育”“美食+乡村”“美食+文化”“美食+美景”“美食+都市”、专题美食节等多种模式,具体通过创新延伸板桥宴、营造板桥美食文化体验氛围、彰显郑板桥食养思想及放达闲逸的生活观以及品牌化运作“板桥宴”等方式发掘利用郑板桥饮食思想,开发运河美食旅游。The canal food tourism development from the perspective of Zheng Banqiao’s food view is conducive to promoting the construction of the Grand Canal cultural belt and making Yangzhou the golden sign of the World City of Gastronomy.Zheng Banqiao’s food concept is mainly reflected in:Wide range and local availability of food materials,emphasizing the seasonal freshness of aquatic products,vegetables and fruits;Light and mild taste,paying attention to the original taste;Elegant and fresh dishes,reflecting the unrestraint and leisure of the humanities;Banquet type diversity,simple and flexible,full of interest.Zheng Banqiao’s view on food is in line with Huaiyang cuisine.At present,various modes such as“food+education”,“food+countryside”,“food+culture”,“food+landscape”,“food+city”and thematic food festival can be explored and utilized to excavate Zheng Banqiao’s concept of food,for example,the innovative extension of Banqiao banquet,the creation of Banqiao food culture experience atmosphere,highlights of Zheng Banqiao food and care ideas,carefree life view and industry brand action of“Banqiao banquet”.
