摘 要:多酚是广泛存在于谷物中的一类次级代谢产物,具有抗氧化活性、抑菌活性、抗癌活性、抗炎活性、抗肥胖及调节血糖、血脂等功效。谷物多酚主要以结合态的形式与纤维素、多糖、蛋白质等大分子结合,其功能活性难以得到有效发挥,利用富集技术提高多酚的含量是提高谷物多酚利用率的有效途径。本文比较分析了不同富集方法对酚类化合物含量和性质的影响,为谷物多酚富集方法的选择和多酚加工利用提供了借鉴和参考。Polyphenols are a kind of secondary metabolites widely existing in cereals, which have antioxidant activity, antibacterial activity, anticancer activity, anti-inflammatory activity, anti-obesity and regulating blood sugar and blood lipid.Cereal polyphenols are mainly combined with cellulose, polysaccharide and proteins in the form of bound, and its functional activity is difficult to be effectively exerted.Therefore, increasing the content of cereal polyphenols by enrichment technology is an effective way to improve the utilization rate of cereal polyphenols.In this paper, the effects of different enrichment methods on the content and properties of phenolic compounds were compared and analyzed, which provided reference for the processing and utilization of cereal polyphenols.
