摘  要:以五味子药材提取物为主要原料,以卡拉胶、吉利丁粉、琼脂、水等为辅料,制备一种具有改善睡眠质量、调节免疫功能的保健食品——五味子膏。基于中国药典(2020版)及印发的保健食品相关文件,确定五味子膏的原辅料及制作流程,通过正交试验等得到最佳的五味子膏配方。结果表明,以单盒量计,五味子5 g、零卡糖30 g、卡拉胶0.09 g、吉利丁粉0.09 g、琼脂0.006 g、水50 mL为五味子膏的最佳配比。根据优化,所得最佳配方能够制备出质量合格、形味俱佳的五味子膏成品。It was to prepare a kind of Schisandrae chinensis Fructus jelly, which could improve sleep quality and regulate immune function, with the extract of Schisandrae chinensis Fructus as the main raw material as well as carrageenan, gelatine powder, agar, sucrose, water as the supplementary material. Based on the 2020 Edition of Chinese Pharmacopoeia and health food related documents, the raw and supplementary materials along with production process of Schisandra chinensis ointment were determined, and the best formula of Schisandrae chinensis Fructus jelly was obtained through single factor experiment and orthogonal experiment. The results showed that the optimal ratio was Schisandrae chinensis Fructus jelly 5 g, sucrose 30 g,carrageenan 0.09 g, gelatine powder 0.09 g, agar 0.006 g and water 50 mL. According to the optimized formula, the product of Schisandrae chinensis Fructus jelly with good quality, shape and taste could be prepared.
