摘 要:目的:通过包装顶空氧气浓度变化确定全脂奶粉耗氧量,进而预测包装奶粉货架期。方法:利用相对耗氧率表征全脂奶粉氧化特性,分析多个氧化指标确定奶粉耗氧量阈值;综合包装材料氧气渗透性与奶粉氧化特性表征顶空氧气浓度变化,建立奶粉耗氧总量模型预测奶粉货架期;结合45℃下聚对苯二甲酸乙二脂/聚乙烯袋装全脂奶粉加速氧化实验进行模型验证。结果:全脂奶粉耗氧量阈值为0.04147 mg/g,加速氧化贮藏期间包装顶空氧气体积分数实验数据和模型预测数据规律一致,实验货架期和理论预测货架期的相对偏差为6.06%。结论:可通过包装顶空氧气体积分数变化来预测全脂奶粉包装货架期。Purpose:To predict the shelf life of milk powder based on the change of oxygen concentration in the packaging headspace.Methods:The relative oxygen consumption rate was used to characterize the oxidation characteristics of whole milk powder,and the oxygen consumption threshold was determined by analyzing several oxidation indexes.Oxygen permeability of the packaging materials and oxidation characteristics of milk powder were integrated to characterize the change of headspace oxygen concentration,and a shelf life prediction model of milk powder was established based on the total oxygen consumption.The model was verified by accelerated storage test of polyethylene terephthalate/polyethylene packaged whole milk powder at 45℃.Results:The oxygen consumption threshold of whole milk powder was 0.04147 mg/g.The experimental data of oxygen concentration in the packaging headspace during accelerated storage was consistent with the predicted data,and the relative deviation between the experimental and theoretical shelf life was 6.06%.Conclusions:The shelf life of whole milk powder can be predicted by the change of oxygen concentration in the packaging headspace.
