摘　　要：直链麦芽四糖是一种新型的功能性淀粉糖,通常由直链麦芽低聚糖生成酶水解淀粉制得。近年来,直链麦芽四糖的功能特性和应用价值不断被挖掘,目前已发现,直链麦芽四糖具有为人体持续供能、维护人体肠道健康、保水保湿、抗炎抗过敏、抑制早期动脉粥样硬化、促进人体对钙的吸收等功效,因此在食品与医药行业有很好的应用前景。本文综述了直链麦芽四糖的理化性质、制备与纯化方法及功能特性,以期为对直链麦芽四糖的进一步研究提供参考。Maltotetraose is a kind of malto-oligosaccharide,which is generally obtained by hydrolyzing starch with the malto-oligosaccharide-forming amylase. It is a new type of functional starch sugar. The research on maltotetraose functional properties and application value have been continuously explored. Maltotetraose has good applications in the food and pharmaceutical industries. It has been found that maltotetraose has the functions of continuous energy supply for the human body,maintenance of human intestinal health,water retention and moisturizing,anti-infiammatory and anti-allergic,inhibiting early atherosclerosis,and promoting the absorption of calcium by the human body,etc. In this paper,the physicochemical properties,preparation and purification methods and functional properties of maltotetraose were reviewed in order to provide a reference for further studies on maltotetraose.
