摘 要:为创建北京食用菊的产业链,对北京房山地区的5个品种(慧田1号、玉桃、轻身、夕瑶、慧田4号)食用菊的基本营养成分进行研究,同时运用主成分分析法,从中筛选出营养品质优良的品种。结果表明:北京房山地区5个品种食用菊水分含量为90.5%~92.4%,维生素C含量为168.4 mg/kg~287.0 mg/kg,可溶性糖含量为1.04%~1.37%,可溶性蛋白含量为1.08%~1.92%,总蛋白含量为1.08%~1.87%,总多酚含量为775.4 mg/kg~1 417.0 mg/kg,钾含量为1 291 mg/kg~1 805 mg/kg,钙含量为155.6 mg/kg~322.0 mg/kg,钠含量为6.521mg/kg~15.990 mg/kg,镁含量为137.5 mg/kg~214.7 mg/kg,铁含量为5.003 mg/kg~15.280 mg/kg,锰含量为1.518 mg/kg~3.833 mg/kg,锌含量为2.025 mg/kg~3.217 mg/kg,铜含量为0.464 0 mg/kg~1.233 0 mg/kg,磷含量为237.6 mg/kg~313.9 mg/kg,16种氨基酸总含量为8 204 mg/kg~13 368 mg/kg。5个品种营养品质得分,从高到低依次为慧田1号、玉桃、轻身、夕瑶、慧田4号。The content of essential nutrients in five edible chrysanthemum varieties(Huitian No. 1,Yutao,Qingshen,Xiyao,and Huitian No. 4)growing in Fangshan District was analyzed in this study for establishing the industrial chain of edible chrysanthemum in Beijing. The principal component analysis was then performed to screen out the varieties with good nutritional quality. The results showed that the five varieties of edible chrysanthemum had the moisture content of 90.5%-92.4%,vitamin C content of 168.4 mg/kg-287.0 mg/kg,soluble sugar content of 1.04%-1.37%,soluble protein content of 1.08%-1.92%,total protein content of1.08%-1.87%,total polyphenol content of 775.4 mg/kg-1 417.0 mg/kg,K of 1 291 mg/kg-1 805 mg/kg,Ca of155.6 mg/kg-322.0 mg/kg,Na of 6.521 mg/kg-15.990 mg/kg,Mg of 137.5 mg/kg-214.7mg/kg,Fe of 5.003 mg/kg-15.280 mg/kg,Mn of 1.518 mg/kg-3.833 mg/kg,Zn of 2.025 mg/kg-3.217 mg/kg,Cu of 0.464 0 mg/kg-1.233 0 mg/kg,and P of 237.6 mg/kg-313.9 mg/kg. The content of 16 amino acids’ in the five varieties ranged from 8 204 mg/kg to 13 368 mg/kg. The scores of nutritional quality of the five varieties were in a descending order of Huitian No. 1 > Yutao > Qingshen > Xiyao > Huitian No. 4.
