摘 要:目的 掌握2019年湖北省荆州市食品污染物以及有害因素的污染状况和食源性疾病的发生情况,及时发现食品安全隐患,为食品安全监管提供科学依据。方法 根据《2019年湖北省食品安全风险监测方案》要求,对荆州市食品流通和餐饮服务等环节随机采集的食品样品开展食品污染物及有害因素检测,通过食源性疾病监测报告系统监测病例。结果 全年监测食品微生物及其致病因子样品330份,检出46份、检出率13.94%,其中冲调谷物制品检出率最高(29.73%);监测化学污染物及有害因素样品360份,超标33份、超标率9.17%,黄花菜和干笋超标率最高(76.32%);监测食源性疾病病例867例,报告发病率1.56/万。结论 荆州市食品安全质量总体良好,仍存在食品安全隐患,食源性致病菌的检出、食品添加剂、金属元素和抗菌药物超标等问题较为突出;应引起高度重视,并加强食品安全监管力度。Objective To grasp the pollution status of food pollutants and harmful factors and the occurrence of foodborne diseases in Jingzhou, Hubei Province in 2019, and to discover potential food safety hazards in time, so as to provide scientific basis for food safety supervision. Methods According to the requirements of the Food Safety Risk Surveillance Program of Hubei Province in 2019, food samples randomly collected from food circulation and catering services in Jingzhou were tested for food contaminants and harmful factors, and cases were monitored through the foodborne disease monitoring and reporting system. Results In the whole year, 330 samples of foodborne pathogens and their pathogenic factors were monitored. 46samples were detected, the detection rate was 13.94%, and the detection rate of prepared grain products was the highest(29.73%);360 samples of chemical pollutants and harmful factors were monitored, 33 samples were over the standard,the over standard rate was 9.17%, and the over standard rate of day-lily and dried bamboo shoots was the highest(76.32%);867 cases of foodborne diseases were monitored, with a reported incidence rate of 1.56/10 000. Conclusions The food safety quality in Jingzhou is generally good, but there are still potential food safety hazards. Problems such as the detection of foodborne pathogens, over-standard food additives, metallic elements and antibacterial drugs are more prominent and should be given high attention, and further strengthen the supervision of food safety.
