摘 要:食品安全事件中,食源性致病菌污染是造成群体性中毒、食源性疾病、大规模食品货物召回等的重要原因。食源性致病菌可能在食品加工或流通的任何一个环节进入到食品中,因而在食品生产、加工、包装、运输、销售整个环节中,食源性致病菌的检测都至关重要。近年来,聚集诱导发光(aggregation-induced emission,AIE)型荧光探针由于其高效的荧光效率和光稳定性、分子结构设计多样、检测模式灵活,在食品安全领域致病菌快速检测中展现出了巨大的优势,为食品中致病菌的检测、鉴别、鉴定等提供了一个优异的解决方案。本文从AIE探针的设计、检测效率、检测模式等方面综述了AIE型荧光探针在致病菌检测方面的研究进展,讨论了其在食品安全快速检测中的优势和应用前景,为食品安全快速检测场景下快速检测技术的开发及应用提供参考。The contamination of pathogenic bacteria is the main cause of food safety incidents, which including mass poisoning, food-borne diseases and large-scale food recalls. Foodborne pathogens may contaminate food in procedures of food processing and circulation, therefore the detection of foodborne pathogens in food is crucial in the whole procedures of food processing, packaging, transportation and sales. In recent years, aggregation-induced emission(AIE) fluorescent probes shows great advantages in extremely sensitive and rapid detection with fluorescence efficiency and photostability, diverse molecular structure designs, and flexible detection modes, which provides an excellent solution for the detection and identification of foodborne pathogens in food. This paper reviewed research progress of AIE fluorescent probes in the detection of pathogenic bacteria from the aspects of probe design, detection efficiency and mode, and discussed the advantages and prospects of its application in the rapid detection of food safety, which provides references for the development and application of rapid detection technology in food safety control.
