摘  要:脂质中的多不饱和脂肪酸容易在金属离子等促氧化因子胁迫下发生氧化反应,且生成的脂质氧化产物已被证明可引起生物膜组织紊乱和功能损伤,影响蛋白质的表达和脱氧核糖核酸(deoxyribonucleic acid,DNA)碱基的修饰,具有潜在的致病风险。构建细胞、动物模型是研究脂质氧化产物吸收代谢机理与危害的常用方法,具有实验周期短、便于分析等优点。同时,脂质氧化产物危害性评价方法逐渐从一些理化指标的检测转化为更直观准确的方法,从而更好的研究脂质氧化产物对人体造成的不良影响。本文综述了脂质氧化产物的危害、实验模型以及评价方法等,阐明了脂质氧化产物的致病性、不同模型对不同脂质氧化产物吸收代谢毒性的适用相关性及其相关评价方法,旨在阐述脂质氧化产物吸收代谢的危害性,为后续研究氧化脂质对疾病发展的影响提供理论支撑。Lipids in food are susceptible to oxidation,and lipid oxidation products have been shown to cause tissue disorders and functional damage in biofilms,affecting protein expression and deoxyribonucleic acid(DNA)base modification,with potential pathogenic risks.The construction of cellular and animal models is a common method to study the mechanism and hazards of lipid oxidation product absorption and metabolism,due to the advantages of short experimental period and easy analysis.At the same time,the method of evaluating the hazard of lipid oxidation products is gradually transformed from the detection of some physical and chemical indicators to a more intuitive and accurate method,so as to better study the adverse effects of lipid oxidation products on human body.This paper reviews the hazards of lipid oxidation products,experimental models as well as evaluation methods,clarifies the pathogenicity of lipid oxidation products,the relevance of different models for the toxicity of different lipid oxidation products uptake and metabolism,and the related evaluation methods,to provide theoretical support for subsequent studies on the effects of oxidized lipids on disease development.
