摘  要:现阶段,随着社会经济的高速发展及城市化建设的持续深入,社会已经进入全新的发展阶段,这也对食品行业的发展起到了极大的促进作用。为了保障食品的安全性、稳定性,应当针对食品安全进行相应的风险监测,找出食品安全风险监测过程中存在的各类问题,并采取针对性的对策加以解决,保障食品安全风险监测工作顺利完成。本文提出了化学污染物和有害因素监测工作、食品微生物及其致病因子监测工作、食源性疾病监测工作的具体开展对策,为县级疾控机构提供更多的参考与借鉴。At this stage, along with the rapid development of social economy, as well as the continuous deepening of urbanization construction, the society has entered a new stage of development, which also gives the development of the food industry to give a great role in promoting. In order to ensure the safety and stability of food,we should carry out corresponding risk monitoring for food safety, find out all kinds of problems existing in the food safety risk monitoring process, and take targeted countermeasures to solve them, so as to ensure that food safety risk monitoring can achieve standard application. This paper puts forward the specific countermeasures for the monitoring of chemical pollutants and harmful factors, the monitoring of food microorganisms and their pathogenic factors,and the monitoring of foodborne diseases, which will provide more reference and reference for county level disease control institutions.
