摘  要:目的 测定产自湖南新化紫鹊界、云南墨江、陕西洋县的紫米中花青素和矿质元素的含量并对花青素和矿质元素进行评价。方法 经提取和消解处理,用超高效液相色谱仪、电感耦合等离子体质谱仪、液相色谱-原子荧光联用仪、原子荧光光度计、可见分光光度计测定其中花青素和矿质元素的含量。结果 3种紫米花青素含量分别为77.1 mg/kg、277 mg/kg、8.43 mg/kg,以矢车菊素的含量最高。常量元素中含量最高的是磷和钾,含量在2 000 mg/kg以上。3种紫米的铬含量为0.322 mg/kg~0.485 mg/kg,无机砷含量为0.102 mg/kg~0.189 mg/kg,镉含量为0.006 mg/kg~0.076 mg/kg,汞含量为0.002 4 mg/kg~0.009 4 mg/kg,铅含量为0.006 mg/kg~0.024 mg/kg。结论 墨江紫米是花青素较好的来源。3种紫米中铬、无机砷、镉、汞、铅的含量都低于国家标准规定的限量。3种紫米的磷、钾、镁、钙、碘含量高于普通大米,能提供人体较为丰富的铬、锰、钼、磷、镁。Objective This study aims to determine the concentrations of anthocyanidins and minerals in purple rice produced in Ziquejie in Xinhua County of Hunan Province, Yang County in Shanxi Province and Mojiang County in Yunnan Province. Methods The concentrations of anthocyanidins and minerals in purple rice were determined by ultra-performance liquid chromatography, inductively coupled plasma mass spectrometer, liquid chromatography-atomic fluorescence spectrometer, atomic fluorescence spectrometer and spectrophotometer after extraction and digestion. Results The anthocyanidins concentration in the three kinds of purple rice were 77.1 mg/kg, 277 mg/kg and 8.43 mg/kg, respectively, and the cyanidin concentration was the highest. The macroelements with the highest concentrations(>2 000 mg/kg) in purple rice were phosphorus and potassium. The chromium concentration in the three kinds of purple rice was within 0.322 mg/kg-0.485 mg/kg, the inorganic arsenic concentration was within 0.102 mg/kg-0.189 mg/kg, the cadmium concentration was within 0.006 mg/kg-0.076 mg/kg, the mercury concentration was within 0.002 4 mg/kg-0.009 4 mg/kg, and the lead concentration was within 0.006 mg/kg-0.024 mg/kg. Conclusion Anthocyanidin is rich in purple rice produced in Mojiang County. The concentrations of chromium, inorganic arsenic, cadmium, mercury and lead in the three kinds of purple rice are lower than the national standard. The concentrations of phosphorus, potassium, magnesium, calcium and iodine in the three kinds of purple rice were significantly higher than that in ordinary rice, and they provide the human body with rich chromium, manganese, molybdenum, phosphorus and magnesium.
