摘 要:目的:调查贵州省正安县在实施打击食品非法添加和滥用食品添加剂专项工作后,正安县居民食用油条中添加剂使用状况,为食品安全风险评估、风险预警、标准制定修订、标准跟踪评价和采取有针对性的监管措施提供科学依据。方法:以正安县为本文研究对象,随机选取正安县2021年各油条早餐摊位、小吃店及连锁经营店的22份油条样品,均为正安县居民的日常饮食消费点,对22份食用油条样品均进行含铝量的监测,对监测结果进行整体统计并作具体分析。结果:随机选取的正安县内22份油条样品中,含铝量均在78.7~187.1 mg·kg^(-1),含铝量在标准范围内的样品仅有9份,含铝量合格率为40.9%;其余13份样品含铝量均在100 mg·kg^(-1)以上,占59.1%;其中,含铝量在100~150 mg·kg^(-1)的有4份,占18.2%;含铝量在150 mg·kg^(-1)以上的样品有9份,占40.9%。整体监测情况表明,正安县油条含铝量超标比较明显。结论:正安县2021年所监测食用油条中含铝量偏高,应通过加强食品安全宣传,强化添加剂使用规定,加强对油条销售点的检查监督力度,以及改进油条制作工艺等方式,逐步减少油条中铝的整体含量,以保障广大消费者的健康安全。Objective: To investigate the use of additives in edible oil sticks by residents of Zheng’an county after the implementation of the special work to combat the illegal addition and abuse of food additives in Zheng’an county, so as to provide a scientific basis for food safety risk assessment, risk early warning, standard formulation and revision, standard tracking and evaluation, and the adoption of targeted regulatory measures. Method: Taking Zheng’an county as the research object, 22 fried dough sticks samples were randomly selected from various fried dough sticks breakfast stalls, snack bars and chain stores in Zheng’an county in 2021, all of which were the daily food consumption points of residents in Zheng’an county. The aluminum content of edible oil stick samples was monitored, and the overall statistics and specific analysis were made on the monitoring results. Result: Among 22 samples of fried dough sticks randomly selected from Zheng’an county, the aluminum content was between 78.7 mg·kg^(-1) and 187.1 mg·kg^(-1). Only 9 samples had aluminum content within the standard range, and the qualified rate of aluminum content was 40.9%. The aluminum content of the other 13 samples was above 100 mg·kg^(-1), accounting for 59.1%. Among them, there were 4 samples with aluminum content between 100 mg·kg^(-1)and 150 mg·kg^(-1),accounting for 18.2%. There were 9 samples with aluminum content above 150 mg·kg^(-1), accounting for 40.9%. The overall monitoring shows that the aluminum content of fried dough sticks in Zheng’an county exceeds the standard obviously. Conclusion: The aluminum content in edible fried dough sticks monitored in Zheng’an county in 2021 is on the high side. We should gradually reduce the overall aluminum content in fried dough sticks by strengthening food safety publicity, strengthening the provisions on the use of additives, strengthening the inspection and supervision of fried dough sticks sales points, and improving the production process of fried dough sticks, so as to pr
