摘  要:当前人们对于饮食的要求越来越高,为了满足人们的需求,中餐菜肴需要积极创新,在传统菜肴的基础上开发新菜肴。烹饪原料在中餐烹饪中占据着十分重要的地位,厨师在制作中餐菜肴的过程中应该选择不同种类的烹饪原料,并按照烹饪原料的特性进行搭配,从而制作出美味的中餐菜肴。本文阐述了烹饪原料在中餐烹饪中的重要作用,研究了烹调原料视角下中餐制作需要遵循的原则以及从烹饪原料视角分析中餐菜肴制作与创新途径。At present, people’s dietary requirements are getting higher and higher. In order to fully meet people’s needs, Chinese dishes need to actively innovate and develop new dishes on the basis of traditional dishes. Cooking raw materials occupy a very important position in Chinese cooking. Chef should choose different kinds of cooking raw materials in the process of cooking Chinese dishes, and match them according to the characteristics of cooking raw materials, so as to make delicious Chinese dishes. This paper expounds the important role of cooking materials in Chinese cooking, studies the principles of Chinese food production from the perspective of cooking materials, and analyzes the ways of Chinese food production and innovative food from the perspective of cooking materials.
