摘  要:为提高辣条中脱氢乙酸含量测定的准确度,避免前处理过程中辣条由于其高吸水特性对测定结果产生影响,本文建立了检测辣条中脱氢乙酸含量的气相色谱方法。结果表明,在1~400μg·mL^(-1)脱氢乙酸的浓度与色谱峰面积呈良好的线性关系,相关系数在0.999以上;辣条中脱氢乙酸加标回收率为82.6%~94.9%;相对标准偏差为1.13%~1.79%,检出限为0.00109 g·kg^(-1)。该方法简便高效,检验成本较低,回收率高,重复性好,测定结果准确,适合用于辣条中脱氢乙酸的定量测定。In order to improve the accuracy of the determination of dehydroacetic acid content in hot strips and avoid the influence of the high water absorption characteristics of hot strips on the determination results in the pretreatment process,a gas chromatography method for the determination of dehydroacetic acid content in hot strips was established.The results showed that the concentration of dehydroacetic acid in the range of 1~400μg·mL^(-1)had a good linear relationship with the chromatographic peak area,and the correlation coefficient was above 0.999;The recovery rate of dehydroacetic acid in spicy strips was 82.6%~94.9%;The relative standard deviation was 1.13%~1.79%,and the detection limit was 0.00109 g·kg^(-1).This method is simple and effective,with low cost,high recovery,good repeatability and accurate determination results.It is suitable for the quantitative determination of dehydroacetic acid in spicy strips.
