摘 要:以马铃薯淀粉为原料,采用普鲁兰酶对马铃薯淀粉进行脱支预处理,以氯乙酸为醚化剂,乙醇为溶剂进行羧甲基化,再以氯磺酸为磺化剂、二氯甲烷为溶剂制备磺酸基羧甲基脱支马铃薯淀粉(SCDPS),在单因素的基础上结合响应面法优化SCDPS制备工艺。结果表明:制备SCDPS的最佳反应条件为反应温度13.0℃、反应时间2.3 h、二氯甲烷用量77.2%(以氯磺酸质量计)、氯磺酸用量97.2%(以淀粉干基质量计),在此条件下SCDPS磺酸基取代度为0.576。Using potato starch as raw material, potato starch was pretreated with pullulanase for debranching, chloroacetic acid as etherifying agent, ethanol as solvent for carboxymethylation, chlorosulfonic acid as sulfonating agent, dichloromethane as solvent to prepare sulfonic acid group carboxymethyl debranching potato starch(SCDPS), and the preparation process of SCDPS was optimized on the basis of single factor and response surface methodology. The results showed that the optimum reaction conditions for preparing SCDPS were reaction temperature 13.0 ℃, reaction time 2.3 h, dichloromethane dosage 77.2 %(based on the mass of chlorosulfonic acid), chlorosulfonic acid dosage 97.2 %(based on the mass of starch dry basis), and the degree of substitution of sulfonic acid group of SCDPS was 0.576 under these conditions.
