摘  要:明胶作为来源广、安全性高的可食性材料,具有良好的成膜性和生物相容性,可以应用在食品包装中。然而,单一成分的明胶无法达到食品包装的要求,需要通过化学交联法、物理处理法、生物相容法、生物高分子共混法对其进行改性处理以扩大应用范围。改性后的明胶基可食性包装膜在肉制品包装、可食性肠衣、果蔬涂膜中应用效果良好,但仍存在一定的问题。基于此,本文分析研究了明胶基可食性包装膜的改性及应用进展,以期为相关研究提供参考。As an edible material with wide sources and high safety,gelatin has good film forming property and biocompatibility,which can be used in food packaging.However,single-component gelatin can not meet the requirements of food packaging.It needs to be modified by chemical crosslinking,physical treatment,biocompatibility,and biopolymer blending to expand its application.The modified gelatin-based edible packaging film has a good application effect in the packaging of meat products,edible casings,fruit and vegetable coatings,but there are still some problems.Based on this,this paper analyzed and studied the modification and application of gelatin-based edible packaging film,in order to provide a reference for related research.
