摘 要:目的:了解电商平台在售酵素食品中匹克硫酸钠、双醋酚丁等多种致泄类非法添加物的添加现状,为今后质量监督执法和评价提供科学依据。方法:对电商平台在售酵素食品进行随机买样,采用高效液相色谱-串联质谱技术对匹可硫酸钠、双醋酚丁、比沙可啶、脱乙酰比沙可啶、酚酞、西布曲明等6种致泄类非法添加物含量进行检测分析。结果:对在电商平台采购的82批次酵素食品进行6种致泄类非法添加物含量的检测分析,检测结果表明,82批次酵素食品中检出本研究重点监测的非法添加物20批,非法添加物质阳性检出率达24.4%。结论:酵素食品特别是凉果类酵素食品、果冻类酵素食品、饮料类酵素食品存在非法添加缓泻类物质的情况,今后应进一步加强酵素食品中致泄类非法添加物的风险监测力度,确保酵素食品质量安全。82 samples of enzyme food were randomly collected from e-commerce platform,the contents of 6 kinds of illegal additives such as deacetylbisacodyl,phenolphthalein,bisacodyl and other laxative substances were determined by high-performance liquid chromatography-tandem mass spectrometry.The test results showed that 20 of the 82 samples were detected to contain illegal additives that were the focus of this study,with a positive detection rate of 24.4%for illegal additives.It could be seen that there were cases of illegal addition of laxative substances to enzyme foods,especially cold fruit enzyme foods,jelly-type enzyme foods,and beverage-type enzyme foods.It is necessary to further strengthen the risk monitoring of illegal additives in enzyme foods to ensure the quality and safety of enzyme foods.
