摘　　要：食品安全作为关乎国计民生的重要问题,影响到人民的身体健康和生命安全。如何快速高效地处理食品安全事件,成为食品安全监管部门一直关注的问题。对食品安全快速检测在食品常见非法添加快速检测、食物中毒与应急保障项目快速检测等方面的应用进行了综述,并展望了其在食品安全保障中的发展前景,以期为该技术在食品安全监管与检测中更广阔的应用提供参考。Food safety is an important issue that associate the national economy and the people's livelihood,and affects people's health and life safety as well.How to supervise and deal with food safety incidents efficiently has always been the focus of food safety supervision departments.The application of rapid food safety detection in the fast detection of common illegal addition,food poisoning and emergency guarantee items and other aspects are summarized in this paper.Meanwhile,the development prospect of the food safety rapid detection in food safety guarantee is also presented,so as to provide new insights for the further application of it in food safety supervision and detection.
