摘  要:以冷冻浓缩乳(储藏温度为-18℃)和冷藏浓缩乳(储藏温度为2℃)在储藏期内不同时间段作为研究对象,通过描述性感官评价,理化、微生物、毒素、卫生指标测试,酸稳定性和热稳定性实验,研究冷冻浓缩乳和冷藏浓缩乳储藏期特性,并预测其保质期。结果表明,在储藏期内冷冻浓缩乳随着时间的延长,感官评价属性总体接受度下降,保质期预测为24个月;冷藏浓缩乳随着储藏时间的延长,酸度、嗜冷菌、酵母菌数量逐渐增多,保质期预测为0.5个月。本文分析冷冻和冷藏浓缩乳储藏特性及预测保质期,旨在为后续优化生产工艺和提升浓缩乳品质等方面提供科学的理论依据。Frozen concentrated milk(storage temperature of-18℃)and refrigerated concentrated milk(storage temperature of 2℃)were taken as the research objects at different time periods during the storage period,acid stability and thermal stability experiments,study the storage characteristics of frozen and refrigerated concentrated milk and predict its shelf life.The results show that:during the storage period,the overall acceptance of sensory evaluation attributes of frozen concentrated milk decreases with the extension of time,and the shelf life is predicted to be 24 months;with the extension of storage time,the refrigerated concentrated milk lactic acid,psychrophilic bacteria and yeasts gradually increased in number,and the shelf life was predicted to be 0.5 months.This paper analyzes the storage characteristics and predicts the shelf life of frozen and refrigerated concentrated milk,aiming to provide a scientific theoretical basis for the subsequent optimization of the production process and the improvement of the quality of concentrated milk.
