摘　　要：核桃含有丰富的营养要素,是人们摄取所需营养物质的优秀天然食品来源。我国的核桃种植面积和产量均居世界第一,然而国内对核桃的开发和利用情况不容乐观,合理利用开发核桃资源成为了亟待解决的问题,所以核桃在食品加工和开发利用领域有着广阔的发展空间。核桃具有健脑益智、调节糖脂代谢保健作用,并且富含丰富的生物活性物质,可针对性开发药用产品及符合不同人群所需的营养要求的核桃保健食品,从而解决核桃产业发展问题。Walnuts are rich in nutrients and are an excellent natural food source for people to consume the nutrients they need.Walnut China's planting area and output are ranked first in the world,the domestic development and utilization of walnuts are not optimistic,and the rational use of walnut resources has become an urgent problem to be solved.The development and utilization of walnuts in the food processing industry have broad space for development.Walnuts have the role of brain nootropics,regulate the metabolism of sugar and lipids,and are rich in bioactive substances,which can be targeted to develop medicinal products and walnut functional food,which meet the nutritional requirements of different populations,and solve the problem of walnut industry development.
