摘 要:目的了解广元市食品中食源性致病菌污染状况,确定危害因素的分布和可能来源,为开展食品安全风险评估预警及食源性疾病防控提供依据。方法根据《四川省食品安全风险监测工作手册》,2013—2021年在广元市范围内随机采集食品样品,并进行常见食源性致病菌检测。使用SPSS 24.0软件进行数据分析,率的比较采用χ^(2)检验或Fisher确切概率法,以P<0.05为差异有统计学意义。结果2013—2021年广元市共监测18大类1470份食品样品,其中11类117份样品检出致病菌,总检出率7.96%;各类食品中以粮食制品检出率最高(47.50%),其次为豆制品(19.05%)和桶装饮用水(14.00%);共检出8种125株致病菌,以铜绿假单胞菌(14.00%)检出率最高,其次为蜡样芽胞杆菌(10.24%)和克罗诺杆菌属(9.68%)。结论广元市市售食品中存在一定程度的食源性致病菌污染,应加强监测和监管力度,以减少食源性疾病的发生。Objective To understand the contamination status of foodborne pathogens in food in Guangyuan City,and to determine the distribution and possible sources of hazard factors,so as to provide the evidence for food safety risk assessment and early warning and the prevention and control of foodborne diseases.Methods According to the Manual of Food Safety Risk Monitoring for Sichuan Province,food samples were randomly collected in Guangyuan city from 2013 to 2021,and common foodborne pathogens were detected.SPSS 24.0 software was used for data analysis,Chi-square test or Fisher exact probability was used to campare the rates,and the difference P<0.05 was considered statistically significant.Results A total of 1470 food samples from 18 categories were monitored in Guangyuan city from 2013 to 2021,and pathogenic bacteria were detected in 117 samples from 11 categories,with a total detection rate of 7.96%.Among all kinds of food,grain products had the highest detection rate(47.50%),followed by soybean products(19.05%)and bottled drinking water(14.00%).A total of 125 strains of 8 kinds of pathogenic bacteria were separated,with the highest detection rate of Pseudomonas aeruginosa(14.00%),followed by Bacillus cereus(10.24%)and Cronobacter SPP.(9.68%).Conclusions There is a certain degree of foodborne pathogen contamination in the commercial food in Guangyuan City,the monitoring and supervision should be strengthened to reduce the occurrence of foodborne diseases.
