摘  要:德昂族酸茶是一种特殊的微生物发酵茶产品,具有丰富的内含物质。重点分析了德昂族酸茶中的主要化学成分,初步查明了德昂族酸茶中的水浸出物、茶多酚、儿茶素、游离氨基酸、咖啡碱、可溶性糖等成分的含量水平;采用SBSE-GC-MS技术,从德昂族酸茶中鉴定出了119种挥发性物质,其中醇类物质、酯类物质和酚类物质等比较丰富;此外,还采用UPLC-MS/MS技术,从德昂族酸茶中鉴定出了1130种非挥发性物质,其中黄酮类、酚酸类、脂质、氨基酸及其衍生物的数量和含量占比高。研究结果可为后续德昂族酸茶的品质化学研究和保健功效评价等提供参考依据。De'ang acid tea is a special microbial fermented tea product,with abundant inner substances.This study focused on the analysis of the main chemical components in De'ang acid tea,and preliminarily identified the contents of water extract,tea polyphenols,catechins,free amino acids,caffeine and soluble sugar in De'ang acid tea;using SBSE-GC-MS technology,119 kinds of volatile substances were identified from De'ang acid tea,and it was found that alcohols,esters and phenols were abundant.In addition,1130 kinds of non-volatile substances were identified from De'ang acid tea by UPLC-MS/MS technology,and it was found that the amount and content of flavonoids,phenolic acids,lipids,amino acids and their derivatives accounted for a high proportion.The results of this study could provide some reference for the subsequent quality chemistry research and healthy function evaluation of De'ang acid tea.
