摘  要:燕窝(Edible bird’s nest,EBN)在我国食用历史悠久,因其具有众多药用价值,一直被人们认为是名贵食材。然而,许多商家为了牟取高额利润,将各种假冒原料掺杂到燕窝中,以提高产品质量、卖相和风味,严重损害了消费者的利益,制约着燕窝行业的发展。因此,燕窝的真伪鉴别一直是重要的研究课题。目前,研究者已经开发了多种方法用于燕窝的真伪鉴别,此研究首先对燕窝常见的掺假类型和掺假物进行了汇总,更新了燕窝真伪鉴别方法的最新进展,分别从遗传学、酶联免疫吸附分析、光谱学、色谱学和凝胶电泳等分析方法鉴定燕窝真伪展开了论述。最后,此研究对燕窝行业真伪鉴别发展前景与挑战进行了展望,为相关技术的发展提供参考。Edible bird’s nest(EBN)has a long history in human consumption.Because of its high medicinal properties,it has been regarded as a precious traditional Chinese ingredient.However,in order to the sake of profit,many businesses adulterate raw materials into EBN to improve the weight,appearance and flavor of products,which seriously damages the interests of consumers and restricts the development of the edible bird’s nest industry.Therefore,the authenticity identification of EBN has always been an important research topic.At present,researchers have developed a variety of methods to identify the authenticity of EBN.This study firstly summarizes the common adulteration types and adulterants in edible bird’s nest,updates the latest developments of the identification methods of edible bird’s nest,and then opens a discussion on the identification of EBN from genetics based technology,enzyme-linked immunosorbent assays,spectroscopic methods,chromatographic methods and gel electrophoresis.Finally,the future perspective and challenges of authenticity identification in the EBN industry are discussed,providing references for future development of related technologies.
