摘　　要：根据冷冻饮品生产工艺流程,运用危害分析方法,确定冷冻饮品生产在原辅料采购、生产过程中设备杀菌消毒、环境卫生污染及员工卫生防护等方面存在食品安全风险,并提出对应的控制措施,主动落实食品安全主体责任,提高国内冷冻饮品行业生产企业食品安全风险控制水平。According to the production process of frozen drinks,use the hazard analysis method to determine the food safety risks in the procurement of raw materials,equipment sterilization and disinfection during the production process,environmental hygiene pollution,and employee hygiene protection in the production of frozen drinks,propose corresponding control measures,and actively implement the main responsibility of food safety to improve the food safety risk control level of production enterprises in the frozen dinks industry in China.
