摘  要:为进一步开发和利用新疆核桃资源,对新疆红仁核桃的主要理化特性、氨基酸、脂肪酸、矿质元素等组成与含量精选测定、分析,并进行评价。结果表明,红仁核桃含粗脂肪60.51%,粗蛋白17.51%,不饱和脂肪酸高于94%。红仁核桃脂肪中饱和脂肪酸有棕榈酸、硬脂酸和花生酸,单不饱和脂肪酸有油酸和花生一烯酸,多不饱和脂肪酸有亚油酸和α-亚麻酸,不饱和脂肪酸含量可达90.78%。红仁核桃中含16种氨基酸,种类丰富,其氨基酸总量为16.81 g/100 g,其中谷氨酸和精氨酸含量较为丰富,含量均在1 g/100 g以上,红仁核桃蛋白质的氨基酸组成也与新疆优系白仁核桃的相近。同时含有丰富的Mn、K、Zn、P、Fe、Na、Mg、Cu、Sr、Ca、Al、Ni、Si、Sn等对人体有益的大量元素和微量元素。红仁核桃可作为一种优质的植物蛋白资源和重要的油料作物资源进一步深入研究。In order to further develop and utilize Xinjiang walnut resources,the main physical and chemical properties,amino acids,fatty acids and mineral elements of Xinjiang red kernel walnut were determined and analyzed.It was found that red kernel walnut contained 60.51%crude fat,17.51%crude protein and more than 94%unsaturated fatty acids.There were three saturated fatty acids(palmitic acid,stearic acid and arachidonic acid),two monounsaturated fatty acids(oleic acid and arachidonic acid),and two polyunsaturated fatty acids(linoleic acid andα-linolenic acid).In the fat of red kernel walnut,the content of unsaturated fatty acids could reach 90.78%.There were 16 kinds of amino acids in red kernel walnut,and the total amino acid was 16.81 g/100 g,among which glutamate and arginine were abundant,and the content was more than 1 g/100 g.The amino acid composition of red kernel walnut protein was similar to that of Xinjiang superior white kernel walnut.It was rich in Mn,K,Zn,P,Fe,Na,Mg,Cu,Sr,Ca,Al,Ni,Si,Sn and other beneficial elements and trace elements.It was found that walnut could be used as a high quality plant protein resource and an important oil crop resource.
