摘  要:我国果蔬产量已稳居全球第一,但在果蔬贮藏保鲜技术方面还有进步的空间。果蔬被采摘后在一段时间内仍会保持旺盛的新陈代谢,极易出现氧化褐变、腐烂变质等不良的品质变化。随着大健康产业被广泛关注,食品行业对食品安全与环保解决方案的需求不断增长,利用可生物降解的天然产品来贮藏保鲜果蔬已成为果蔬保鲜行业的热点话题。本文主要从动物源、植物源、微生物源和基因工程4个方面介绍生物保鲜技术在果蔬中的应用研究进展,预测了基因工程育种技术保鲜果蔬的应用前景,以期为果蔬贮藏保鲜技术的实际应用提供理论依据和具体应用方向。The output of fruits and vegetables in China has ranked first in the world.However,fruits and vegetables still maintain a strong metabolism after collection and are prone to adverse quality changes such as oxidative Browning,rot and deterioration.With the widespread attention of the big health industry and the growing demand for environmental protection solutions in the food industry,biodegradable natural products to store fresh fruits and vegetables have become a hot topic in the fruit and vegetable preservation industry.In this paper,summarized the research progress of the application of biological fresh-keeping technology for fruits and vegetables from the four aspects of animals source,plants source,microbials source and genetics engineering and prospected the application prospect of genetics engineering breeding technology in fresh-keeping fruits and vegetables,in order to provide theoretical basis and application guidance for the application of fruit and vegetables storage fresh-keeping technology.
