摘  要:为探究制丝工艺中的水分迁移规律,以低场核磁为核心,结合水分含量与水分活度2个指标,探索制丝过程中烟丝内部水分赋存状态、分布和迁移。结果表明,烟丝中含有3种状态的水,其中绝大多数都是结合水。在制丝过程中,烟丝水分活度下降,3种不同赋存状态的水存在动态迁移,由烟丝内部的结合水向烟丝表面的自由水单向迁移。为准确了解烟丝内部水分的迁移规律,实现制丝过程中对水分的精准控制提供基础数据和理论指导。To explore the water distribution and water transfer law of cut tobacco,low-field nuclear magnetism were conducted,with the measurement of moisture content and water activity,to investigate the water state and mobility of cut tobacco during making process.The results demonstrated that cut tobacco contained three different water states,and most of them was bound water.The bound water was unidirectionally transferred to the free water during making process,and the water activity continued to decrease.This study could be useful for accurately understanding the transfer law of cut tobacco,to provide basic data and theoretical guidance for better control of moisture during making process.
