摘 要:以浙禾香2号水稻为研究对象,研究防霉、包装处理对稻谷贮藏品质的影响。结果表明:贮藏8个月后,使用0.5g/L纳他霉素处理后的稻谷,其霉菌数量、脂肪酸值分别为(25.00±9.54)CFU/g和(25.95±0.35)mg/100 g,仅为对照组的9.09%和92.05%,说明纳他霉素处理对稻谷防霉效果显著,对延缓稻谷陈化也具有一定效果。真空包装处理对稻谷防霉、防陈化效果取决于贮藏环境的温度,常温条件下,真空包装处理可抑制霉菌繁殖,延缓稻谷陈化及脂肪酸的增加,维持稻谷垩白率及大米商品品质;高温条件下,真空包装处理对稻谷的防霉、防陈化效果不佳。Taking Zhehexiang 2 rice as the research object,the effects of anti-mildew and packaging treatments on the storage quality of rice were studied.The results showed that after 8 months of storage,the mold quantity and fatty acid value of the rice treated with 0.5 g/L natamycin were(25.00±9.54)CFU/g and(25.95±0.35)mg/100 g,respectively,which were only 9.09%and 92.05%of the control group,indicating that natamycin treatment had a significant anti-mildew effect on rice and also had a certain effect on delaying rice aging.The effect of vacuum packing treatment on anti-mildew and anti-aging of rice depended on the temperature of storage environment.Under normal temperature conditions,vacuum packing treatment could inhibit the propagation of mold,delay the aging of rice and the increase of fatty acids,and maintain the chalkiness rate of rice and the commodity quality of rice.Under high temperature conditions,vacuum packing treatment had poor effect on anti-mildew and anti-aging of rice.
