摘 要:通过胆盐水解酶(BSH)定量分析、静态体外消化分析、模拟动态消化分析及不同阴离子对乳酸菌降解胆固醇的效果分析,研究乳酸菌代谢产物对胆固醇的降解作用。结果表明:LR-ZRX01、LA-ZRX02、LP-ZRX03体外胆固醇降解率分别为25.61%±1.25%、28.87%±2.16%、20.39%±1.84%,唾液静态体外消化后胆固醇降解率分别为27.35%±2.35%、34.28%±2.41%、23.53%±1.98%,胃液静态体外消化后胆固醇降解率分别为26.95%±1.56%、30.51%±2.35%、22.27%±1.15%,动态模拟消化后食糜排空泵中胆固醇降解率分别为16.22%±1.05%、20.22%±2.82%、14.78%±1.12%,仿生胃中胆固醇降解率分别为13.98%±1.13%、16.84%±1.28%、15.15%±2.04%,BSH比酶活分别为(0.3887±0.0039)、(0.3801±0.0068)、(1.2169±0.0083)U/mg。添加适量浓度的Cl^(-)、NO_(3)^(-)、SO_(4)^(2-)、CO_(3)^(2-)、PO_(4)^(3-)、C_(6)H_(5)COO^(-)、C_(6)H_(5)O_(7)^(3-)阴离子能够提高乳酸菌的胆固醇降解率或降解效力。LA-ZRX02的胆固醇降解率和降解效力最高。The effects of lactic acid bacteria metabolites on cholesterol degradation were studied by BSH quantitative analysis,static in vitro digestion analysis,simulated dynamic digestion analysis and effect analysis of different anions on cholesterol degradation.The results showed that in vitro cholesterol degradation rates of LR-ZRX01,LA-ZRX02 and LP-ZRX03 were 25.61%±1.25%,28.87%±2.16%and 20.39%±1.84%,respectively.The cholesterol degradation rates were 27.35%±2.35%,34.28%±2.41%and 23.53%±1.98%in saliva after static in vitro digestion,and 26.95%±1.56%,30.51%±2.35%and 22.27%±1.15%in gastric juice.The cholesterol degradation rates of the collected samples in the dynamic simulation of digesta empting pump after digestion were 16.22%±1.05%,20.22%±2.82%and 14.78%±1.12%,while the cholesterol degradation rates in the biomimetic stomach were 13.98%±1.13%,16.84%±1.28%and 15.15%±2.04%,respectively.BSH specific enzyme activities were(0.3887±0.0039),(0.3801±0.0068),(1.2169±0.0083)U/mg,respectively.The cholesterol degradation rate or degradation efficiency of lactic acid bacteria could be improved by adding proper concentration of Cl^(-)、NO_(3)^(-)、SO_(4)^(2-)、CO_(3)^(2-)、PO_(4)^(3-)、C_(6)H_(5)COO^(-)、C_(6)H_(5)O_(7)^(3-)-anion,and LA-ZRX02 had the high-est cholesterol degradation rate and efficiency.
