摘 要:以香椿为材料,采用不同浓度(0.1%、0.5%、1.0%、1.5%、2.0%)的海藻酸钠溶液对香椿进行涂膜处理,晾干后分别置于室温(20±5)℃和冷藏(4±1)℃条件下进行贮藏,分析不同浓度海藻酸钠溶液涂膜处理对香椿采后品质的影响。结果表明:采用低浓度(0.1%~1.0%)的海藻酸钠溶液涂膜处理结合冷藏贮藏不仅能够延缓香椿中花青素、叶绿素和维生素C含量的降解速度,同时对香椿失水和腐烂也有一定的延缓效果。该研究可为海藻酸钠用于香椿采后保鲜提供一定的理论依据。Toona sinensis was used as material,and different concentrations of sodium alginate solution(0.1%,0.5%,1.0%,1.5%,2.0%)were used for coating treatment of Toona sinensis.After drying,Toona sinensis was stored at(4±1)℃and room temperature(20±5)℃,respectively.The effect of coating treatment with different concentrations of sodium alginate solution on the quality of Toona sinensis after harvest was analyzed.The results showed that coating treatment with low concentration(0.1%-1.0%)sodium alginate solution combined with cold storage can delay the decrease of anthocyanin,chlorophyll and vitamin C content in Toona sinensis,and also have a certain effect on the decrease of water content and decay in Toona sinensis.This study can provide a theoretical basis for the use of sodium alginate for preservation of Toona sinensis after harvest.
