摘　　要：通过从白酒老熟过程中发生的一系列物理和化学变化现象,论述了白酒老熟的机理。分析了陶坛贮存白酒的促老熟作用及优势,探讨了陶坛贮酒过程中的工艺要点及微量成分变化情况,对生产实践中利用陶坛贮酒提高白酒品质提供帮助。Through a series of physical and chemical changes in the aging process of Baijiu,the aging mechanism of Baijiu was summarized.This paper analyzes on the functions and advantages of promoting the aging and ripening of Baijiu stored in pottery jars,probes into the technological essentials and the changes of trace components in the process of wine storage in pottery jars,and provides help for improving the quality of Baijiu by using wine stored in pottery jars in production practice.
