摘  要:为探究丹参红茶(Salvia miltiorrhiza Bge.black tea,Smbt)和丹参绿茶(S.miltiorrhiza Bge.green tea,Smgt)香气差异的物质基础,采用固相微萃取(Solid phase microextraction,SPME)技术分别对其香气成分进行提取,并通过全二维气相色谱-飞行时间质谱联用(Comprehensive two-dimensional gas chromatography-time-of-flight mass spectrometry,GC×GC-TOFMS)对香气成分进行定性与定量分析。结果表明:从Smbt中鉴定出245种香气成分,Smgt中鉴定出233种香气成分;2种茶叶的共有香气成分有124种,以醇类、醛类、烯烃和饱和烷烃为主,这4类化合物占比高于70%,构成这2种茶叶的基本香气成分。醇类、醛类、烯烃和饱和烷烃等物质在2种茶叶中的占比不同,Smbt中醇类占比最高(25.771%),而Smgt中醛类占比最高(30.435%),饱和烷烃的占比均较低;正己醇等化合物只存在于一种茶叶中。香气成分的差异导致2种茶叶呈现不同的香型。该文为丹参叶的制茶工艺提供参考,并为丹参地上部分的进一步开发利用奠定理论基础。To explore the material basis of the aroma difference between Salvia miltiorrhiza Bge.black tea(Smbt)and S.miltiorrhiza Bge.green tea(Smgt),solid phase microextraction(SPME)was used to extract the aroma components,and qualitative and quantitative analyses of the aroma components were performed by comprehensive two-dimensional gas chromatography-time-of-flight mass spectrometry(GC×GC-TOFMS).The results show that 245 aroma components are identified from Smbt and 233 from Smgt.From both kinds of tea,the 124 shared aroma components detected are dominated by alcohols,aldehydes,olefins and saturated alkanes,which account for over 70%and constitute the basic aroma components of the two kinds of tea.However,the proportions of alcohols,aldehydes,olefins and saturated alkanes in these two kinds of tea are different.Specifically,Smbt has the highest proportion of alcohol(25.771%),while Smgt has the highest proportion of aldehyde(30.435%),and the proportion of saturated alkanes is relatively low in both types of tea.Additionally,such compounds as hexanol are only found in one kind of tea.The difference in aroma components leads to two types of tea showing different aroma types.This study provides some reference for the tea making process of S.miltiorrhiza Bge.leaves and lays a foundation for the development and utilization of the aboveground part of S.miltiorrhiza Bge.
