摘  要:以新鲜鹿茸菇为试材,以不同臭氧浓度处理鹿茸菇子实体,研究鹿茸菇菌落总数、霉菌、酵母菌、大肠杆菌的指标变化及子实体腐败程度.结果表明:经浓度5.59 mg/L臭氧处理过的鹿茸菇子实体,在4℃环境贮藏到第12天时,其腐败程度及菌落总数、酵母菌、大肠杆菌等指标最低,分别为1.6×10^(4)、1.8×10^(4)和7.1×10^(3)CFU/g,霉菌指标相对较低,为1.2×10^(4)CFU/g,防腐保鲜效果明显.说明采用5.59 mg/L臭氧浓度处理鹿茸菇能显著降低因微生物引起的鹿茸菇腐烂,为新鲜鹿茸菇的长期保鲜提供了参考.Different concentrations of ozone,the numbers of total colony,mold colony,yeast colony,Escherichia coli colony and the degree of corruption of the sporocarp of Lyophyllum decastes were compared to screen the optimum ozone concentration for antisepsis of the sporocarp of Lyophyllum decastes.The results show that when stored at 4℃for 12 days,the number of total colony,yeast colony,Escherichia coli colony and mold colony in the sporocarp of Lyophyllum decastes treated with 5.59 mg/L ozone were lower than those of other treatment groups,which were 1.6*10^(4),1.8*10^(4),7.1*10^(3)and 1.2*10^(4)CFU/g,respectively.Under this condition,the degree of corruption of the sporocarp of Lyophyllum decastes was also the lowest.It is suggested that 5.59 mg/L ozone concentration can significantly reduce the rot of pilose antler mushroom caused by microorganisms,which is the best concentration with good reference significance for long-term preservation of fresh pilose antler mushroom.
