摘  要:目的了解和掌握承德市2019年—2021年主要市售食品食源性致病菌污染情况,发现本市食品存在的安全隐患,为食品安全风险监测工作提供依据。方法根据《河北省食源性疾病监测工作手册》工作要求,按照国家标准方法,对承德市2019年—2021年主要市售食品进行抽样和监测。结果共检测米面制品、中式凉拌菜、生禽肉等14类593份食品样品,其中154份样品中检出致病菌,检出率为25.97%。不同年度食源性致病菌检出率差异有统计学意义(χ^(2)=10.809,P<0.05);检出率较高的有蜡样芽胞杆菌(24.52%)、克罗诺杆菌属(21.74%)、致泻性大肠埃希菌(21.21%);不同食品中食源性致病菌检出率最高的为冲调谷物制品(56.52%),其次是新鲜食用菌(40.38%)、生禽肉(40.00%)及生畜肉(36.36%)。结论承德市市售食品存在不同程度的食源性致病菌污染,食品安全状况不容乐观。相关监管部门应当加强食品生产、销售环节的卫生监管,采取针对性措施预防食源性疾病和食物中毒事件的发生。Objective This paper aims to understand and grasp the contamination status of food-borne pathogens in Chengde City from 2019 to 2021 and find the food risks,so as to provide scientific basis for food safety risk monitoring work.Methods According to Hebei Province Food Safety Risk Monitoring Work Manual,and combined with the national standard method,commercial food samples in Chengde from 2019 to 2021 was collected and monitored.Results A total of 593 samples including rice and flour products,Chinese salad,raw poultry meat of 14 categories were monitored,154 positive samples of pathogenic bacteria were detected,and the total detection rate was 25.97%.The detection rate of food-borne pathogenic in different years was statistically significant(χ^(2)=10.809,P<0.05);the bacteria with higher detection rate were Bacillus cereus(24.52%),Cronobacter(21.74%),and Escherichia coli(21.21%);the highest detection rate of pathogenic bacteria was the processed cereal products(56.52%),followed by mushroom(40.38%),raw poultry meat(40.00%),and raw livestock meat(36.36%).Conclusion There are different degrees of pollution in the commercial food in Chengde,is not optimistic.Relevant departments should strengthen the supervision of food production and sales,and take effective measures to effectively prevent foodborne diseases and food poisoning incidents.
