摘  要:目的 了解2020年沧州市水产品中致病性弧菌的污染状况,为水产品相关食品风险监测及进一步防控提供数据支持。方法 随机采取不同地点、不同季度的水产品样品,根据《2020年国家食品污染和有害因素风险监测工作手册》要求,对霍乱弧菌、副溶血性弧菌、溶藻弧菌、河弧菌和创伤弧菌5种致病性弧菌进行检测。对鉴定为霍乱弧菌和副溶血性弧菌的菌株采用荧光聚合酶链式反应进行霍乱毒素ctx基因和副溶血性弧菌tdh、trh和tlh基因检测,确定其毒力基因。结果 180份水产品中68份检出致病性弧菌,检出率为37.78%,副溶血性弧菌检出率为27.22%,霍乱弧菌检出率为3.66%,溶藻弧菌检出率为6.67%,创伤弧菌检出率为0.56%,河弧菌未检出。分离出的49株副溶血性弧菌均携带tlh基因,均未携带tdh和trh基因;6株霍乱弧菌全部为非O1/O139群霍乱弧菌,ctx毒力基因均为阴性。结论 沧州市水产品中存在不同程度的致病性弧菌污染,以副溶血性弧菌和溶藻弧菌为主,检出的副溶血性弧菌和霍乱弧菌均不携带毒力基因。食品安全监管部门应加强水产品监管力度,以减少致病性弧菌引发食源性疾病的风险。Objective To investigate the contamination status of pathogenic Vibrio in aquatic products of Cangzhou in 2020,and to provide data support for aquatic products-related food risk monitoring and further prevention and control.Methods Random samples of aquatic products from different locations and quarters were taken and tested for five pathogenic Vibrio cholerae,Vibrio parahaemolyticus,Vibrio alginolyticus,Vibrio fluvialis and Vibrio vulnificus according to the requirements of the National Food Contaminants and Harmful Factors Risk Monitoring Workbook 2020.The strains identified as Vibrio cholerae and Vibrio parahaemolyticus were tested by fluorescent polymerase chain reaction for the cholera toxin ctx gene and Vibrio parahaemolyticus tdh,trh and tlh genes to determine their virulence genes.Results Pathogenic Vibrio were found in 68 of 180 aquatic products,with a detection rate of 37.78%.The detection rate of Vibrio parahaemolyticus was 27.22%,Vibrio cholerae was 3.66%,Vibrio alginolyticus was 6.67%,Vibro vulnificus was 0.56%,and Vibrio fluwialis was not detected.The 49 strains of Vibrio parahaemolyticus all carried tlh genes,but none carried tdh and trh genes.All of the 6 Vibrio cholerae strains were non-01 and non-0139,and all were negative for the ctx virulence genes.Conclusion The aquatic products in Cangzhou are contaminated with pathogenic Vibrio parahaemolyticus and Vibrio alginolyticus.Neither Vibrio parahaemolyticus nor Vibrio cholerae carries virulence genes.Food safety regulators should strengthen the supervision of aquatic products to reduce the risk of foodborne diseases caused by pathogenic Vibrio.
