摘  要:食品安全监督管理实习是食品质量与安全专业的必修课,该课程对于提高学生在食品安全监督和食品安全管理方面的实际工作能力有着重要作用。采用传统教学方式开展的食品安全监督管理实习课程教学,学生参与度不强、积极性不高。本研究在新兴技术范式下的食品安全监督管理实习课程教学方式创新研究中设计了多个真实食品安全监督管理场景,结合虚拟仿真技术,带领学生拍摄贴合食品安全监督和食品安全管理内容的短视频,引导学生从多维度思考食品安全问题,探讨食品安全管理和监督工作的最优解,从而达到促进学生多角度感知、了解食品安全问题并使用合适方式处理食品安全问题的目的,本研究还探索了新的课程考核评价方式,在食品安全监督管理实习课程的实践中取得了良好的教学效果。The food safety supervision and management practicum is a compulsory course for food quality and safety majors,and it plays an important role in improving students’practical work skills in both food safety supervision and food safety management.The traditional approach to food safety supervision and management is not very participatory and motivating.this study designed a number of realistic food safety supervision and management scenarios,combined with virtual simulation technology,and led students to make short videos that fit the content of food safety supervision and food safety management,leading them to think about food safety issues from multiple dimensions and to explore the optimal solutions for food safety management and supervision.The purpose of this study is to enable students to perceive and understand food safety issues and to use appropriate approaches to deal with them.The study also explored new ways of evaluating the course,and these attempts were used to good effect in the food safety supervision and management practice course.
