摘  要:亚硫酸盐具有一定的毒性,摄入过多的亚硫酸盐会对人体健康造成危害。因此,需对盐渍食用菌中的亚硫酸盐进行测定。使用盐酸副玫瑰苯胺比色法对盐渍食用菌中的亚硫酸盐的含量进行测定常会存在测定结果不准确、实验试剂含有毒性或操作过于复杂的弊端。因此,本文建立了盐渍食用菌加工中亚硫酸盐的离子色谱测定方法,样品经超纯水浸提,经过滤后进行分析。测定结果表明,离子色谱测定方法的线性回归方程为y=0.145x,相对标准偏差在0.8%~2.5%,实验样品加标回收率在92.6%~98.0%。与盐酸副玫瑰苯胺法相比,离子色谱测定方法测定过程简单、试验试剂无毒,实用价值较高。Sulfite has a certain degree of toxicity,and excessive intake of sulfite can cause harm to human health.Therefore,it is necessary to determine the sulfites in salted edible mushrooms.The use of hydrochloric acid pararosaniline colorimetric method to determine the content of sulfites in salted edible mushrooms often has the drawbacks of inaccurate measurement results,toxicity of experimental reagents,or overly complex operation.Therefore,this article establishes an ion chromatography method for the determination of sulfites in the processing of salted edible mushrooms.The sample is extracted with ultrapure water,filtered,and analyzed.The measurement results indicate that the linear regression equation of the ion chromatography method is y=0.145x,with a relative standard deviation of 0.8%to 2.5%,and a recovery rate of 92.6%to 98.0%for the experimental sample.Compared with the hydrochloric acid pararosaniline method,the ion chromatography method has a simple determination process,non-toxic test reagents,and high practical value.
