摘　　要：随着数字化时代的到来,许多数字化茶叶加工新技术不断出现,对茶产业的发展具有深远的影响。渥堆发酵是普洱(熟)茶加工的关键工艺,为普洱茶品质形成的关键所在。文章以普洱茶数控发酵为例,梳理总结普洱茶渥堆发酵的发展现状及数字化在渥堆发酵中的应用,对普洱茶加工的数字化发展前景进行展望,为普洱茶加工的清洁化、数字化及高品质普洱茶生产提供参考。With the advent of the digital era,many new technologies of digital tea processing are emerging,which have a profound impact on the development of the tea industry.Pile fermentation is the key process of pot-fermented Pu`er tea processing and the key to the formation of Pu`er tea quality.Taking the numerical control fermentation of pot-fermented Pu`er tea as an example,this paper summarized the development status of pot-fermented Pu`er tea fermentation and the application of digitalization in the fermentation,looked forward to the digital development prospect of pot-fermented Pu`er tea processing,and provided a reference for the cleaning and digitalization of Pu`er tea processing and the production of highquality Pu`er tea.
