2021-2022年博罗县生肉制品食源性致病菌污染状况监测结果分析

摘  要:目的:分析2021—2022年博罗县生肉制品食源性致病菌污染状况监测结果,为博罗县生肉制品的安全防控提供依据。方法:2021—2022年抽检博罗县在售生肉制品,每季度抽检30份,每年120份,按照《国家食品污染物和有害因素风险监测工作手册》规定的方法检测大肠埃希氏菌O157:H7、沙门氏菌、金黄色葡萄球菌和单增李斯特氏菌,按照国家标准判定检测结果。结果:2021年的致病菌总检出率为8.33%(10/120),2022年致病菌总检出率为2.50%(3/120),2022年致病菌总检出率显著低于2021年(P<0.05)。从采样地点来看,各类超市的检出率为3.75%(3/80)、批发市场的检出率为5.00%(4/80)、肉菜市场的检出率为7.50%(6/80),差异无统计学意义(P>0.05)。从包装类型来看,散装的检出率为6.25%(10/160)、定型包装的检出率为3.75%(3/80),差异无统计学意义(P>0.05)。结论:2021—2022年博罗县生肉制品食源性致病菌污染程度较低,但仍需高度重视,始终严格把关,为消费者提供安全的生肉制品。Objective:To analyze the monitoring results of foodborne pathogenic bacteria pollution in raw meat products in Boluo county from 2021 to 2022,and provide a basis for the safety prevention and control of raw meat products in Boluo county.Method:From 2021 to 2022,30 raw meat products on sale in Boluo county were sampled quarterly and 120 samples were collected annually.Escherichia coli O157:H7,Salmonella,Staphylococcus aureus,and Listeria monocytogenes were tested according to the methods specified in the National Food Pollutant and Harmful Factors Risk Monitoring Work Manual,and the test results were determined according to national standards.Result:The total detection rate of pathogenic bacteria in 2021 was 8.33%(10/120),and the total detection rate of pathogenic bacteria in 2022 was 2.50%(3/120).The total detection rate of pathogenic bacteria in 2022 was significantly lower than that in 2021(P<0.05).From the sampling location,the detection rate of various supermarkets was 3.75%(3/80),the detection rate of wholesale markets was 5.00%(4/80),and the detection rate of meat and vegetable markets was 7.50%(6/80),with no statistically significant difference(P>0.05).From the perspective of packaging type,the detection rate of bulk packaging was 6.25%(10/160),and the detection rate of standardized packaging was 3.75%(3/80),with no statistically significant difference(P>0.05).Conclusion:The pollution level of foodborne pathogens in raw meat products in Boluo county from 2021 to 2022 is relatively low,but it still needs to be highly valued and strictly controlled to provide consumers with safe raw meat products.
