摘　　要：食品是生活中不可或缺的一部分,随着人们生活水平的日益提高,食品安全问题更加受到关注。食品安全隐患主要来自微生物的污染,故微生物的快速检测至关重要。从分子生物学技术、免疫学技术、代谢学技术、生物传感器技术、流式细胞术五方面对微生物快速检测技术的现状进行分析,并讨论了其在食品安全检测中的应用。Food is an indispensable part of people's life,and with the increasing improvement of people's living standard,the safety of food has received more attention.The safety risk of food is mainly from microbial contamination,so the rapid detection of microorganisms is crucial.This paper presents a detailed analysis of the current situation of microbial rapid detection technology from five aspects:molecular biology technology,immunological technology,metabolism technology,biosensor technology,and flow cytometry,and discusses their applications in food safety testing.
