摘  要:茶叶感官审评术语在快速发展的信息时代受其传统特色影响,无法在专家和消费者之间建立有效衔接,制约了消费者对茶叶感官品质的清晰理解。感官描述语极易受到不同文化、语言背景的影响,茶叶作为中国最具代表性的传统饮品之一,随着市场对茶叶风味描述的需求越来越迫切,有必要建立基于中国语言背景的茶叶感官描述语体系,从而解决消费者喝茶喝不明白的情况。根据《感官分析方法学建立感官剖面的导则》(GB/T 39625—2020),通过文献查阅,并借鉴专家多年积累的丰富经验,《茶叶感官风味轮》(T/CTSS 58—2022)快速高效地开发出了一套完整的基于中国语言背景的茶叶感官描述语言体系。文章对团体标准《茶叶感官风味轮》的制定与发布,标准内容,茶叶感官基元语素,颜色轮、香气轮、滋味轮的各级结构,以及合计155个属性等作了一一解读。Influenced by its traditional characteristics in the rapidly developing information age,tea sensory evaluation terms can't establish an effective connection between experts and consumers,which restricts consumers'clear understanding of tea flavor.With the increasingly urgent demand for tea flavor description,it is necessary to establish a system of tea sensory description led by Chinese to help consumers to realize tea flavor clearly.According to"Sensory analysis-Methodology-General guidance for establishing a sensory profile"(GB/T 39625—2020),through literature review and the rich experience accumulated by experts over the years,"Tea Sensory Wheel"(T/CTSS 58—2022)developed a complete tea sensory description language system quickly and efficiently based on Chinese language background.The paper provided an interpretation of the development and publication of the group standard"Tea Sensory Flavor Wheel",including the semantic elements of tea sensory elements,the hierarchical structures of color wheel,aroma wheel,and taste wheel,as well as a total of 155 attributes.
