基于测量不确定度评定小麦粉中湿面筋含量的合格概率与控制值

摘  要:湿面筋含量是评定小麦粉质量的一项重要指标,试验依据GB/T 5506.1—2008测量湿面筋含量,依据JJF1059.1—2012评定湿面筋含量的测量不确定度,依据CNAS-TRL-010:2019评定湿面筋含量的合格概率和控制值。结果表明,试样中湿面筋含量的扩展不确定度可表示为:G=(22.1±0.5)%,k=2;试样中湿面筋含量的合格概率为64.8%;当试样中湿面筋含量的测量值大于22.43%时,湿面筋含量的合格概率大于95%。通过评定小麦粉中湿面筋含量的测量不确定度、合格概率和控制值,可为生产企业与检验机构提供参考。Wet gluten content is an important index for evaluating wheat flour quality.The test measured wet gluten content according to GB/T 5506.1—2008,evaluated the uncertainty of wet gluten content according to JJF 1059.1-2012,and evaluated the acceptance probability and control value of wet gluten content according to CNAS-TRL-010:2019.The results showed that the expanded uncertainty of wet gluten content in the sample could be expressed as:G=(22.1±0.5)%,k=2;The acceptance probability of wet gluten content was 64.8%.When the measured value of wet gluten content in the sample was greater than 22.43%,the acceptance probability of wet gluten content was greater than 95%.By evaluating the measurement uncertainty,acceptance probability and control value of wet gluten content in wheat flour,it could provide reference for production enterprises and inspection institutions.
