摘  要:文章为了解我国大米中稻曲菌素的污染情况,2021年从安徽、广东、黑龙江、湖北、湖南、江苏、江西、上海、四川和浙江等地区收集318份大米样品,运用超高效液相色谱串联质谱法检测稻曲菌素A、B和G等的含量。结果显示,在123份大米样品中检出稻曲菌素,总检出率为38.68%;其中稻曲菌素A、稻曲菌素B和稻曲菌素G的检出率分别为30.19%、21.38%和7.86%,平均质量分数分别为3.21μg/kg、1.16μg/kg和0.88μg/kg。地区间大米样品中稻曲菌素的污染水平存在一定差异。尽管总体污染水平相对较低,但我国大米样品中稻曲菌素污染的发生率较高,应引起重视。In order to understand the pollution situation of rice aspergillin in China,318 rice samples were collected from Anhui,Guangdong,Heilongjiang,Hubei,Hunan,Jiangsu,Jiangxi,Shanghai,Sichuan,and Zhejiang in 2021.The content of rice aspergillin A,B,and G was detected using ultra-high performance liquid chromatography tandem mass spectrometry.The results showed that rice aspergillin was detected in 123 rice samples,with a total detection rate of 38.68%;The detection rates of oryzacin A,oryzacin B,and oryzacin G were 30.19%,21.38%,and 7.86%,respectively,with an average concentration of 3.21,respectivelyμG/kg,1.16μG/kg and 0.88μG/kg.There are certain differences in the pollution levels of rice aspergillin samples between regions.Although the overall pollution level was relatively low,the incidence of rice aspergillin pollution in rice samples in China was relatively high and should be taken seriously.
