摘  要:单细胞增生李斯特菌是一种严重危害人体健康的食源性致病菌,它的预防与监测备受重视。研究发现,一些天然抗菌剂(如抗菌肽)能有效地抑制单增李斯特菌的活性。抗菌肽来源于天然物质,有着较好的热稳定性,它可以和微生物细胞发生反应,破坏其结构,抑制微生物的生长和发育。大豆球蛋白抗菌多肽作为抗菌肽的一种,它能够与单增李斯特菌细胞膜表面产生静电相互作用,从而破坏细胞膜,通过降低ATP酶的活性破坏其呼吸代谢,同时也能干扰单增李斯特菌DNA的复制与表达,导致单增李斯特菌死亡。本文总结了大豆球蛋白抗菌多肽抑制单增李斯特菌的机制,为大豆球蛋白抗菌多肽的使用及开发提供理论依据。Listeria monocytogenes is a kind of food-borne pathogenic bacteria which is seriously harmful to human health,and its prevention and monitoring have attracted much attention.Studies have found that some natural antimicrobials(such as antimicrobial peptides)can effectively inhibit the activity of Listeria monocytogenes.Antimicrobial peptides are derived from natural substances and have good thermal stability.They can react with microbial cells,destroy their structures,and inhibit the growth and development of microorganisms.As a kind of antimicrobial peptide,soybean globulin antibacterial polypeptide can produce electrostatic interaction with the surface of Listeria monocytogenes,thus destroying the cell membrane,destroying its respiratory metabolism by reducing the activity of ATPase,and interfering with the replication and expression of DNA of Listeria monocytogenes,leading to the death of Listeria monocytogenes.In this paper,the mechanism of inhibiting Listeria monocytogenes by soybean globulin antibacterial peptides was summarized,which provided theoretical basis for the use and development of soybean globulin antibacterial peptides.
