摘  要:酱香型白酒是中国白酒产业最为闪亮的“名片”之一,尤其是随着社会的不断进步,酱香型白酒产业迎来了新的一轮消费热潮,进一步推动了酱香型白酒产业的创新与发展。就酱香型白酒产业核心环节—酿造环节近年来的创新研究进行了综述,主要就原料选择、润粮工艺、高温堆积工艺以及机械化酿造工艺等工艺点的创新研究进行了浅析,并对后续的研究提出了拙见,以期为酱香型白酒的健康、绿色、持续性发展提供一定参考与借鉴。Jiangxiangxing Baijiu is one of the most shining"business cards"of Chinese Baijiu industry,especially with the continuous progress of society,the Jiangxiangxing Baijiu industry has ushered in a new round of consumption boom,which has further promoted the innovation and development of the Jiangxiangxing Baijiu industry.In this paper,the innovation research of the core link of the Jiangxiangxing Baijiu industry in recent years was reviewed,and the innovation research of the process points such as raw material selection,grain drying process,high-temperature stacking and mechanized brewing process was analyzed.In addition,some suggestions were put forward for the follow-up research,in order to provide some reference and reference for the healthy,green and sustainable development of Jiangxiangxing Baijiu.
