摘  要:基于成果导向教育(outcome-based education, OBE)的理念,以学生为中心,结合“食品物性学”课程的教学内容和学生毕业要求支撑点,设计并实施基于OBE理念融合翻转课堂的“食品物性学”教学实践,以此调动学生积极性,加深学生理论掌握深度,提高学生学习成效。根据学习成绩统计分析和问卷调查调研,结果表明以OBE理念为导向的翻转课堂对于提高学生学习成效、培养学生自学能力、加强学生沟通能力等方面都能够产生积极作用,能够较好地培养学生解决食品复杂工程问题的能力。研究对于“食品物性学”课堂教学改革和高水平人才培养具有一定实践意义。On the basis of the OBE teaching concept,student-centered concept,the combination of teaching contents of"Physical Properties of Food",and graduation requirements,aim to design and implement the teaching reform of the course of"Physical Properties of Food"so as to mobilize students'enthusiasm,to deepen students'theoretical mastery,and to improve students'learning achievements.According to a comparative analysis of academic performance statistics and questionnaire surveys,the results demonstrate that the integration of the outcome-based education concept and flipped classroom teaching shows a positive effect on improving the learning achievement of students,cultivating their self-learning ability,and strengthening their communication skills.Moreover,it can enhance the ability of students to solve complex food engineering problems.It can provide practical significance for the reform of"Physical Properties of Food"classroom teaching and the training of talented students.
