摘  要:以4种不同来源的薏苡仁为材料,研究贮藏形态、温度、水分含量和包装材料对其贮藏品质变化的影响。结果表明,在贮藏过程中未脱壳的薏苡仁水分含量保持稳定,丙二醛和脂肪酸值的增量均小于脱壳组和粉碎组。与25℃和37℃相比较,4℃贮藏能降低脂肪酸和丙二醛50%的增量。另外,PA复合膜材料对薏苡仁贮藏效果比PET和铝膜包装材料好。该研究为薏苡仁的贮藏研究提供理论数据及实践依据。The effects of storage form,temperature,moisture content and packaging materials on the storage quality of coix seed from four different sources were studied.The results showed that the moisture content of non shelled coix seed remained stable during storage,and the increment of MDA and fatty acid value was smaller than that of shelled and crushed coix seed.Compared with 25℃and 37℃,4℃storage can reduce the increase of fatty acid and malondialdehyde by 50%.In addition,the storage effect of PA composite film material on coix seed was better than that of PET and aluminum film packaging materials.This study provided theoretical data and practical basis for the storage research of coix seed.
